Our process

Our process begins with the selection of the finest quality fruit. Our best selling product, Mayhaw Jelly, begins with primarily ‘orchard grown’ Mayhaws which we press at our facility to get the juice. We use a large wine press to produce full strength (un-diluted) juice with a Brix of 6 or more. (Brix is a term used to denote the weight percent sugar of the fruit.) Muscadine grape and Blueberries have a Brix of 16, for instance. This juice is either used immediately for making jelly or frozen for future use. A percentage of our juice is sold to other commercial jelly makers throughout the country. Smaller quantities are sold to individuals for home use.
